Salt pretzels

This recipe was given to me my my german exchanges mother, they are not quite as good as hers but the come pretty close! They are a delight to have fresh baked each morning; all hot, fresh, and salty!

The baking soda bath is important before you bake them to give them the gorgeous golden brown chewy top. And adding a large pinch of crystallised salt makes it all 200X better!

Ingredients:

300ml warm water

1 packet instant yeast

1tsp salt

1tbsp brown sugar

1tbsp melted butter

460-500g plain flour

coarse salt for sprinkling

120g baking soda

2L water

Method:

•Whisk the yeast into the warm water. Allow to sit for a minute. Whisk in the salt, brown sugar, and melted butter. Slowly add the flour 100g at a time. Add more flour if it is still sticky. Poke it with your finger, if it bounces back is is ready to knead.

•Turn the dough out onto a floured surface. Knead the dough for 3 minutes and shape into a ball. Cover lightly with a damp tea towel and allow to rest for 10 minutes(meanwhile i like to start boiling the soda bath)

•Preheat the oven to 200C. Line 2 baking trays and set aside.

•With a sharp knife, cut the dough into about 50g sections. Roll the chunks into 50cm ropes.Twirl the pretzel shape

•Bring the baking soda and water to boil, drop the pretzels into the water for 20-30 secs-using a slotted spatula to lift them out. Lay them on your prepared baking trays and sprinkle with the salt.

•Bake them for 12-15minutes or until golden brown

•Remove from the oven and enjoy!!
