Deluxe Chocolate Fudge Cake

This cake is AMAZING, even i love this cake and i am not a fan of chocolate cakes. It is super rich and the fudge sauce is to die for...
I made this cake for my brother Sebastian's 13th birthday, hope you have the very best year and i'll think about getting you a card next year!

Ingredients:

Cake:
350g plain flour
1/2 tsp baking powder
2 tsp bicarbonate of soda
pinch of salt
110g cocoa powder
425g cold water
225g margarine
600g caster sugar
4 large eggs
180g apricot jam
Fudge sauce:
125ml double cream
140g granulated sugar
75ml golden syrup
75ml milk
1/2 tssp vanilla essence
100g dark chocolate
Method:
Cake:
•Preheat the oven to 180 C
•Sift the flour with the baking powder, bicarb and salt. Blend the cocoa with the water and set aside.
•Soften the margarine with a wooden spoon and add the sugar. Cream until light and very soft.
•Whisk the eggs until frothy, add to the creamed mixture a little at a time and beat well.
Stir in the flour alternately with the cocoa and water. Divide the mixture between two tins and bake for 30-35 mins.
•Leave to cool for a few minuets and then turn out onto a wire rack to cool completely
•Once cool fill with jam and pour the fudge sauce over the top and sides.


Fudge Sauce:
•Put all ingredients except the chocolate in a heavy based saucepan over a moderate heat, stirring constantly until the mixture is a pale caramel colour.
•Remove from the heat and beat in the chocolate pieces.If the mixture is too thick you can add 35ml cold water
•Serve immediately or keep warm until needed.
